Hyderabad’s newest restaurant Vayu, makes a compelling case for regional Indian cuisine

Vayu’s menu journeys across India’s landscapes, drawing inspiration from regional ingredients, time-honoured traditions and bold flavour profiles that define Indian dining today.

Perched above the city, Vayu arrives as a new rooftop destination that reflects the changing status-quo of Hyderabad’s social energy. Conceived as a social destination where food, cocktails, music and conversation exist in equal measure, Vayu is designed for a generation of well-travelled, experience seeking individuals who value the social atmosphere as much as what is served on the table.

Named after the Sanskrit word for wind, Vayu takes inspiration from the force that crossed India long before highways connected them. The concept is built around a simple proposition: the wind was India’s first traveller, moving across coastlines, mountains, plains and deserts, and it is this same spirit of movement and memory that shapes the space itself.

Designed as an open rooftop retreat, Vayu balances contemporary architecture with layered interiors. The spatial planning moves seamlessly between intimate corners, communal tables and the bar, creating an environment equally suited to after-work gatherings, weekend celebrations and long evenings. As day transitions into night, the space evolves into a lively social hub where the city’s creative, entrepreneurial and culturally curious communities converge.

The smaller plates travel with equal range. Shrimp Pickle with Masala Brioche reinterprets a familiar coastal preserve through a contemporary format. Chicken Wings Vepudu draws from Andhra flavours, while Steamed Kalimpong Momos and Jeedipappu Pakoda bring influences from the hills and the south.

The kitchen works across five distinct regional traditions, creating a menu that reflects the breadth of India’s culinary legacy. Andhra’s Gongura Mamsaam sits alongside Kundapur Ghee Roast from coastal Karnataka, Kerala’s Meen Pollichattu, Kolhapuri Mutton Sukka from Maharashtra and Butter Chicken from Old Delhi.

This spirit of movement and discovery continues through the cocktail programme and unfolds through The Paper Plane’s Logbook, inspired by the simple act of folding a paper plane and watching it drift into the unknown. Each symbolic landing becomes the starting point for a new discovery, picking up regional ingredients, familiar flavours and memories along the way. One flight lands in a grandmother’s kitchen, inspiring a cocktail with gongura, another settles on a mango tree, while others arrive at destinations that shape each drink through the ingredients they encounter. Crimson Wind pairs gongura with tequila and salted agave, Kokum Cloud brings together gin, kokum and passionfruit, while Firestorm Ember layers ginger-infused tequila with fermented chilli agave. Together, the cocktails capture the spirit of discovery and nostalgia, inviting guests to travel through taste as much as geography.

It is a place where stories travel as freely as the wind that inspired it, creating experiences that extend far beyond the meal itself, for a city, and a generation that is always ready to gather.
